THE ORIGINS
The "CROQUETTE CHAUVET", a small dry almond biscuit, was born in the bakery of the baker Henri CHAUVET, based in Vinsobres, a pretty little hilltop village with a burlesque name in Drôme Provençale. In 1908, following the dazzling success of the recipe, Henri decided to register the name under the name "CROQUETTES DE VINSOBRES" and to trade in it. This delicious delicacy quickly became a must in restaurants and grocery stores located in neighboring towns and villages.
In 1951, he decided to sell his trade secret to Mr. CORBIN, the other baker in the village.
THE NEW FAMILY OF CROQUETTES
OF VINSOBRES
In 1985, it was the turn of the BÉDOUIN family, located in Visan in Provence in the Enclave des Papes, to buy the recipe. Since 1833 under the name "CASSERIE BÉDOUIN" it has been transforming and marketing local products to pastry chefs, bakers, ice cream makers, nougatiers, biscuit makers... Supplier of almonds, representing a quarter of its composition, it was only one step more than to make them.
Now within the BISCUITERIE DE PROVENCE in St Maurice sur Eygues, in Drôme Provençale, the 6th generation of the BÉDOUIN family continues to perpetuate the original recipe within its factory located 6km from Vinsobres.
